Apart from the fact that I would personally not feel so confident in a vehicle without its own generator, be it a stator or an alternator, you must also remember that the ignition in those older motorcycles is also controlled by the stator, then it wouldn't be so easy to get rid of. So, what would you do to set the ignition without a stator?
