So does anybody have any ideas on a good underbody panel material? Trying to smooth it off and make an under tray but not sure about what to use. Corrugated plastic seems to be a little flimsy and expensive.

I had coroplast under mine, but had melting issues at the resonator toward the back of the car. I ended up taking it off, and in the next couple of weeks here will be using aluminum sheet to make a new panel. You can get it pretty cheaply in 36"x36" sheets from Home Depot.
