Hey man I'm pretty impressed with how it's all fitting. Your seating position is perfect, dash fits perfectly, etc. Tires are a little wide but it's not terrible, they're likely already +45et offset so not much you can do.

My VW body is a lot lower on the car than how you did yours, so it's a different situation but I think the principle will be the same. Bend some metal and weld it onto the VW door sill and the chassis pinch seam. I had to get the body as low as possible because the seating position of the Miata was so low that if the body wasn too high then I wouldn't be able to see out of the windshield! Of course I had fender clearance issues because it was "slammed" so I lifted the suspension 3 inches. Just finished it a few days ago actually and took it on a test drive.
