I've been getting on the meat-free/reduced bandwagon too.

Turns out hot Pad Gra Pow w/Tofu still rocks (can lose the fish sauce even)

And we've also been enjoying BLTs (without the "B") this summer with tomatoes from the garden, it's pretty damn good too.
