A few weeks ago, talking with a guy who works at an Uruguayan-style parrilla steakhouse, I mentioned that offal seems to be much more appreciated in former Spanish colonies than in Brazil, even though chicken giblets are quite commonly eaten here. But we'll most likely never know whichever "mistery meat" is found on hamburger patties and other processed meat products.
