Considering an MPGuino...

I currently have a scangauge in my Honda Insight. But I would like some thing with the potential of a little more accuracy as I would guess monitoring the injectors would tell weather or not you are in leanburn?

My main question is, how hard would it be to monitor the LAF sensor? From the reading I have done, the constant voltage is .45 and the sensor has a range of 1.5 volts, positive is a lean mixture and negative is a rich mixture. - Encyclopedia - Honda Insight Lean-Burn Oxygen Sensor

How would one go about hooking this up to an arduino? My goal is to have some sort of data logging in the end.

[edit] *****
As a not I am fairly new to the arduino. but from the time I have played with it, it seems fairly simple as far as programming it. just need help on the electrical side of it.
