I keep an OpenOffice spreadsheet, as well as the Ecomodder logs for my mileage figures. My tires are 2% taller than stock, so I enter m y receipts in the spreadsheet first, then use the corrected mileage on this site.
As far as consistency goes, you really need to pay close attention to your driving style. I don't know if you have different seasonal gas formulations in the third-world hellhole that is Texas, but up here in the North, I was getting a consistent 38mpg in August, where trying to drive the same is getting me 30mpg in December. The differences here are colder, more damp weather, and a different gas formulation. It takes a while to establish patterns, so be patient.
