Touch screen and video output is pretty easy.. check out the Parallax Propeller...

Canbus is not real easy on it, but could be done.

I hope to be back to all this stuff soon, school and other projects have kept me pretty busy.

I forget where I read it, but there was someone who was using an old palm pilot and plugging it in to their controller port.

That seems like a much more practical type of computer to have in your car then hauling your lap top with you and used palm pilots are pretty cheap too.

I implemented CAN bus reporting for our controller, and tried to keep the code compatible with Cougar.

Right now we are using a ScanGauge for reporting, but the next step is using a OBD2-bluetooth adapter with an Android device for a graphic display. That would have happened already except that the bluetooth transceiver was broken on the adapter I bought.
