Last week, my wife, Kristin, made some zucchini bread. MMmmmm. So good.
Tonight, we are going to a friend's housewarming, so we are making zucchini chocolate cake. It started as zucchini brownies, but the recipe was incorrectly doubled, changing the thickness a bit, so we are calling it zucchini cake!
Yes, it is dessert, but it has extra fiber, vitamins, and goodness all hidden inside there.
I highly recommend it with GOOD (no corn syrup, nothing artificial) vanilla ice cream, and bananas. (Too bad bananas aren't local too!)
