For my 2000 Cherokee I almost never move it off of:

MPG - instant "right foot conscience"
AVG - this is the "game" number that I'm always working to get as high as possible
MPH - 6% larger tires and the factory speedo has a bit of laziness in it's movements
TPS - used in conjuntion with the instant MPG to get best FE (and control the right foot)

I've found the most important gauge to be the TPS, although sometimes when I can I switch on the LOD instead of MPH to dial it in even more. Since I'm used to the vehicle, I've been able to use the TPS to most accurately put the throtttle where it will work best consistantly to keep FE up.
