When given the finger, smile and wave at them (with genuine gusto). It's disarming. It will cause them bewilderment or confusion. Most likely they will have never seen that in response to their intended insult.
If they point a camera at you, be flattered. Smile and wave even more. It will be on the record that you were being friendly, not combative.
If they point a gun at you... (well, that's actually extremely unlikely - so no point in engaging in a negative fantasy, if unnecessary.)
