That's over 21 hours of driving @ 70 km/h and a huge distance for what's called an "eco" competition !

Use the Scangauge or GPS to give you the average speed if this speed is a requirement.
In my car, the board computer's average always reads higher than the GPS or SG.

I'd look at the maximum speed you need to drive to be able to reach that average. You don't want to drive any faster than necessary.
This would obviously depend on the type of roads you need to travel.
Is it mostly motorway ?
