Most cars of that era that still had carbs had a solenoid that shut off fuel to the idle circuit when you turned off the ignition. It was there to prevent dieseling and was called an "anti dieseling solenoid".

Now you may run into some enrichment on a restart but I don't think so (not positive about that).

If it has a speedometer cable it will work with the ignition off (mechanical drive, like my motorcycle)
