Aero mods are your friend if you're mostly driving highway. Don't forget a roof rack delete (if it's got one).
Start a fuel log to keep you motivated & track changes. (And realize that as the weather gets colder, fuel economy will normally decline anyway, so efficiency improvements may be less obvious at this time of year if you're only measuring tank-to-tank.)
Last but definitely not least: consider an MPG gauge.
