Welcome to ecomodder.

do my mirrors look aerodynamic or is a passenger mirror delete in order?
They look as clean as mirror come - though it's very tricky to say wether mirrors are really aerodynamically fine.
Aerodynamically, they're a difficult area, so removal is almost always a (small) benefit.

also what are the rear tire deflectors behind the rear wheel for in this picture?
They're usually to legally cover the wheel so it doesn't stick out of the body.
That's a legal requirement in some areas.

and lastly is there anything subtle/easy i can do to my rear end?
Before you go chopping up the 17 yo Camaro, which still looks OK on the pics, what MPG are you getting at the pump ?

If it's really a guzzler, you might keep it as a fun car and limit the miles you put on it, and get a more economical daily driver.
Just a thought ...
