I've deleted:

A/C and most components
Fan Clutch (replaced with electric that hardly ever runs)
PS pump
30-40lbs of junk in the box and toolbox
Spare tire rarely makes it into the box unless i'm taking a long trip
Alternator gets disconnected for most day trips

Overall I've gone for weight and things that put a load on the engine. Anything that makes it easier to get to speed, and easier to cruise at that speed has to help a little bit. Multiple deletes start to add up over time.
