At the moment, all that's not in my new car is the mandatory fire extinguisher, and the jack-up kit that came with the car - even though it has no spare wheel, nor anywhere to put one.

There's nowhere to secure them safely and I simply don't want heavy items like these flying around, wether they're mandatory or not.

I have deleted :
-Radio Antenna
-Rear Wiper

For better aero. The rear wiper isn't in my car so it counts as weight remove, but I kept my antenna in the car. I also want to delete the A/C (soon) and mechanical water pump and replace it with an electric (not soon).

Have you research them much? When I did I saw that the units were expensive and that Honda guys voiced concerns about failures. Made me skittish on the swap.

I know exactly what it takes and yes its expensive, around 500$. Echo-Francis has installed one in his Echo and it works really well.

I've deleted:

A/C and most components
Fan Clutch (replaced with electric that hardly ever runs)
PS pump
30-40lbs of junk in the box and toolbox
Spare tire rarely makes it into the box unless i'm taking a long trip
Alternator gets disconnected for most day trips

Overall I've gone for weight and things that put a load on the engine. Anything that makes it easier to get to speed, and easier to cruise at that speed has to help a little bit. Multiple deletes start to add up over time.

Both Probe and Civic were relieved of the rear seat and belts, as well as both exterior mirrors. The Probe got an interior convex mirror and the Civic got a small, custom exterior convex one to comply with Michigan law.

Civic's spare tire was gone long ago so I carry a Slime kit, tow strap, jumper cables, jack, tire iron, safety vest and other emergency and/or safety equipment.

I replaced the fiberboard rear cargo shelf (floor of the cargo area) with blue styrofoam sheets for weight savings, and am considering removing the passenger side wiper and rear wiper for another couple pounds + a tiny aero gain. In due time...

The car also has no badges. Which doesn't make any functional difference at all.

Of course cycling to work helps "delete" extra pounds from my belly, but Oreos keep it coming back.

No deletes at least for the next months, but I've already considered to replace many interior trims of my dad's Subaru with some cheaper and washable stuff, possibly lighter too. Maybe he would complain less when my dog pukes inside the car...
