Your numbers are pretty good, actually. My Caravan had the smaller engine and still struggled to get 25mpg on my best day. You're doing about that or better pretty consistently, so you seem to be doing something right.
I don't know what it is about those Caravans, but they're just gas pigs. I guess it must be because they're so heavy with lousy aero treatment at the rear, rounded corners that ruin flow separation.
