Just buy a school bus and swap in a 600cc motorcycle engine. With some aeromods and a 25' boat tail you're bound to get at least 26mpg, and the 0-60 wouldn't be that bad at around 230 seconds. The only real problem would be repainting it, as that side corrugation can be difficult to sand.
