I write the odometer and trip odometer readings on my receipts. After I collect a few of them, I record them in an excel spreadsheet. I enter the odometer reading, date, fuel pumped, and cost per gallon, and have it calculate mpg, ave mpg, distance driven, and a few other things I've forgotten. I find it convenient for charting economy over time, and automatically correcting for tire size if needed.
I use the same spreadsheet to keep track of all maintenance as well, so it's one convenient record for every car I own.
