Per my dial micrometer, the basic thickness is 0.008", so layering is probably best if you're wanting a wider separation, ie: two layers/strips for 0.015" ±0.001" spacing. And, I'd use only strips -- not whole sheet -- between the plates, a strip in the center and one at each end.
