Is your speedo out if whack now with those tires? I know I said you need to drop it but it just clicked in my head that it's probably because of shorter tires. Was this planned or just the tallest tires you could get?
Some tire places are like that because in their mind you are doing something dangerous and they don't want the liability. Look into getting tire mounting hand tools and a tripod balancer, maybe off craigslist, that way you can order tires on tire rack and mount them yourself without the hassle of dealing with tire guys.
