It's safe to drive without the power steering if you delete it properly and brakes you can upgrade to last for 5-6 heavy breakings without need for your engine to spin. You can find know how here on EM. I've deleted PS in my BMW (my Polo didn't have it anyway), and I haven't noticed any real difference while driving except when car is fully stopped.
Brakes lasted without any changes (BMW) for 4 heavy breaking sessions before you could feel the difference it's almost the same for Polo. Maybe a bit less for Polo that's why i'm planning to build in a vacum reservoir into the system. Especially because I'm EOCing much more in Polo.

vacuum gauges are purchased and following lots of youtube vids seem pretty straight forward to install. actually planning to install them this weekend if 1 year old son allows.
Fingers crossed for cleaning your sensor and installing vacum gauge... How about SG or MPGuino?
