Sounds like it's for automatic drivers:

With EcoStart, the driver brings the vehicle to a stop with their foot on the brake, then makes a slightly deeper press to command an engine shutdown. By slightly releasing pressure on the brake, the driver restarts the engine. A Voyo restart is fast, efficient and clean and it all takes place while the transmission remains in Drive!

With my factory S/S car, I stop (the engine cuts), put the trans in first, and lift off the brake. The engine restarts when I dip the clutch. I think I'd find holding the brake (harder than was needed to stop the vehicle) tiresome in a manual, I normally
just rest my foot on the brake just enough to stop the car rolling. I'd also find slightly repositioning my foot on the brake restarting the engine really annoying.
I wonder if it at least forces the ECU into closed loop on restart? My factory S/S stays closed loop on S/S restart, but still goes open loop if you key off.
