Those IAT's would be incredible. Like almost unbelievable incredible. You may want to check and make sure you are sampling IAT's at the right point. Or that it is sampling correctly.
Rough math here:
27psi @ 11deg/psi (which is near fantasyland compressor efficency, but we'll go with it) is 297deg. Add 85deg ambient temp (assuming you aren't getting any heat from under the hood) and you have a 382deg charge temp. Knocking a 400deg air charge temp down to 100deg would be tough running a A2W with ice water running through it.
