accurate temperature measurement

I just bought an interesting bit-o-kit.

I ordered 12 total 1/4" 125 ms response EGT K-type probes (125 ms to respond/start to react will take 5X the response time to read full. AKA 125ms =625 ms/ .625 sec) other more common response times 250,550, and 1200 ms.(1.25, 2.7, and 6 sec) the gage has a 1 sec refresh rate. The more comin probes need 1-6 refreshes to show engine damaging overheat condition.

I have a 6 cyl, so 6 ports will read individual cylinders 3 will measure intake air ambient (pre turbo), charge air (pre intercooler), and intake air temp just under the grid heaters in the manifold.

what would you like to see tested ?
oil temp rise compared to coolant temp rise.
how the grill block effects coolant , oil, trans , under hood/ IAT

What do you think ? Did Cummins properly balanced the fuel sys AKA each burning at the same air fuel ratio/ temp (the richer the hotter/ smokier)
