You're right, a new mask every four coats. Trace with a knife blade before peeling it.
New in the box, you say?

As long as the last coat is freshly wet, it should peal without tearing and without having to cut it with a blade which will scratch an outline into the factory paint. The last coat does have to be a heavy wet coat that will re-wet the lower layers, and all of the coats shouldn't be more than 20 mins old each. Basically light 50% transparent coat, wait 20 mins, 2nd light coat to 75% transparent, wait 20 mins. Then 1 or 2 heavy coats with 20 mins between, but pull the tape (or mask) immediately after the last coat.
Other places wait for it to dry to peal the overspray up to the break off line.
This video is dip stripes on top of dipped car so it's a little different, but should work the same. He starts talking about the painting process at 9:29
