Pex would be ideal. But if it ain't broke why fix it. My house is partially copper but mostly steel. I figure I'll replace them once they break (or start to leak).

The water heater pilot went out once and froze the water heater that then filled up and froze the water heater closet and ended up breaking out the door that was on it.

I couldn't find any PEX hot water heaters though to replace it with
