Pex would be ideal. But if it ain't broke why fix it. My house is partially copper but mostly steel. I figure I'll replace them once they break (or start to leak).

The water heater pilot went out once and froze the water heater that then filled up and froze the water heater closet and ended up breaking out the door that was on it.

I couldn't find any PEX hot water heaters though to replace it with

I don't know what my friend's house had for the water main. I think it was grey, but not PVC. The crap broke for no reason because it doesn't freeze 4ft in the ground (making locating the leak and repairing it a PITA).

Water mains in old homes are almost always steel when they leak.
I have had to dig up 3 because they leaked and guess what, they were all steel.

We owned a home in Eureka, Ca that was almost 100% redwood beside the oak flooring. The main joists, beams, framing and rafters all redwood. Then all the plumbing was copper, even the drain lines and main stacks. The plumber who added on for a 2nd bathroom felt dirty adding the PEX to that. He said it was a "work of art" being in the crawlspace of that home. I don't know how he knew the original plummers name was Art.

Oh and PS on topic, my first ride in an EV was from another contractor on that remodel, one that did solar and sunrooms back in 1995. He had an EV Porsche speedster kit car and gave me a ride up to 65mph on highway 101. That was went I knew EVs were or could be more than golf carts.

Yeah lots of old growth redwood lumber here to in old homes. Any time I can I salvage those old redwood 2x4s I do, because they appear to be approximately double the strength of farmed lumber.

Polybutylene is what I used in my home when I built it. Back then it was the latest and greatest.

Then 6 months later the lawsuits started.

The problem wasn’t with the pipe. It was the plastic fittings and aluminum clamp rings that some people used. If you used copper fittings, along with copper clamp rings, you were good to go.

Knock on wood. Mine has given me no problems in over 25 years.

It’s estimated Polybutylene plumbing was installed in over a 10 million homes.

My friend's house leaked in 5 different places along a single straight section of pipe within the 40 ft from the water main and the home. I dug up mature hedges, lawn, and even partially under the house to make repairs.
