Too coarse and it needs to sit in the steeping water a bit otherwise the taste isn't extracted enough (or use a french press), too fine and it gets the bitterness to develop, but that can be mitigated by the small addition of table salt. Better to be too fine.
Chances are if you buy bagged coffee it's at least a month too old and kinda flavorless.
