Always go class 3 hitch or greater. There's hardly any difference in price.
Standardize on the 2" hitch so you don't have to monkey around with different pins and balls.
I put a class 3 on my Prius, and it's rated to tow nothing. I hauled a yard of dirt with it, and regularly pulled a jet ski. I've got a class 3 on my company CX-5.
