Why would you want super flat? A slight crown adds strength. Flat surfaces will show any imperfection when they are rotating.
Get some (oversize?) pizza pans, drill a small hole in the center and spin form them just like Moon does. Steel would be harder than aluminum, but I think two handheld caster wheels might do it.
