98% of an AC delete can be accomplished by turning it off. You'd need to re-engineer the belt/pully system to remove the AC. The next person to purchase the car isn't going to be thrilled by the mod and will reflect that in their offer price.

The air intake at the front windshield has positive pressure, and always moves a bit of air in the cabin unless the ducting is set to recirculation. The heat dial only adjusts how much heated air gets blended in with unheated air, so there's no fuel economy difference there.
