The one I never could understand is why we drive cars yet ride bicycles.

What speed usually people drive there?
What you, as an ecomodder, drive there?
I drive just over 50 km/h indicated in the city when possible as I'm in 5th gear at that speed.
On the highway I'm merging at 130 km/h and cruise at 90 km/h indicated in the right lane because 5th gear is realy short.

Speed limits are:
City: 50 km/h
Rural: 100 km/h
Highway: best I can do is 230 km/h

This is an important point. Especially, I presume, on the Autobahn.

Well, Autobahn is just the german word for highway.
But yea, don't merge at a speed lower than the flow of traffic.

AND ESPECIALY DON'T STOP ON THE RAMP

Capital A makes it a proper noun.

I recommend not spinning out on an onramp. I just missed sitting backward and motionless in the right lane. (d*mn terminal oversteer on black ice)

My car does the opposite, it spins out when I lift off the throttle and understeers on throttle.

Nah, but 230 km/h is 143,75 burgers per hour.
But fuel efficiency at that speed is terrible

I live on the border of 3 countries, and every small country in Europe has different speed limits. For convenience and above all FE I often use the lowest of the 3 on the highway, being 100 km/h. In Germany it's important to be flexible and adapt the speed to the lane, being somewhere between 90 - 110 km/h right and well above 130 km/h left ... And in the Netherlands you can do 100 km/h between 6 am and 7 pm and 130 km/h at night.

Belgium, where I drive most:
City center: 30km/h (you're faster by bike, but cars are gradually being banned here)
Residential area: 50 km/h
Rural: 70 to 90 km/h
Highway: 120 km/h

Most people here drive 10 km/h faster on the speedo than the maximum speed.
