That may well work CR. Cadence sensors are the cheaper way pedal sensor bicycles work.
No doubt on could plumb into all sorts of sensors, to a Pi or Arduino.
But torque sensor ctlrs skips all that, making it the simplest way of doing things using off the shelf parts.
I believe the torque sensor type ctlrs also use rpm data from the motor hall sensors.
