175/65/14 vs 185/60/14 VX with HX wheels

I've been reading about different tire options on this site and others and not sure if I am more or less confused than I was at the beginning

Here is my situation and if anyone can chime in I would highly appreciate it.

Car is a 1994 VX with a set of HX wheels. I just bought it and 2 of the tires are decent but 2 are pretty much bald so I'm looking for a new set.
I've decided on the General Altimax RT43 but not sure which size to get.
Here is some info on each one:

175/65/14 - 82T 600 AB 1047 load 44psi 11/32 14lb 7"wide 23"diameter
185/60/14 - 82H 600 AA 1047 load 51psi 10/32 15lb 7.4"wide 22.7diameter

Price is $40 more for 185/60/14 (for a set of 4)

I know they aren't LRR but that's fine. They have excellent reviews and cost about 2/3 of the Michelin Defenders. There's a $50 rebate on them until 3rd of Oct.
I am looking for good fuel efficiency but don't want to sacrifice too much on handling. I'm leaning towards the skinnier 175 because from what I read, it should be a little better on fuel. The only reason I'm debating the 185 is because it seems like a higher quality tire, although I could be mistaken.

How much does the T and H rating make a difference in fuel efficiency or quality of a tire?

I would go with the 175's because, like you said, they are skinnier and they would also be taller. The 175's are 1.3% taller than the 185's I don't know what the exact effect would be but going with the 175's would lower your rpm's. what size the other two tires that are already on the car?

At "typical" tire pressures you would see no noticeable difference between the two tires. For the purposes of gas mileage I would go with the skinnier tires

The car came with 2 sets of wheels. 4 Civic HX 14" (previous owner put plasti dip on them, so I'm taking that off slowly) and 4 15" Integra GSR Fat Fives. I'm planning on selling the GSR wheels. The 2 good tires on the HX's are 185/60/14 but are mismatched.

There will be much, much larger differences between tires (meaning make and model) than the difference between those 2 sizes. Those 2 sizes results in virtually the same RR (all other factors being equal).

So pay more attention to what you are buying and let the size sort itself out (that is, it would be the last decision to be made) as to what you pick.
