One might get close with a narrowed El Camino cab back and the wheelwells and engine hatch from a Type II. Type III engine for a lower bed height.

I'm sure there's been a stepside old Beetle. Here's some material from Spectre BGW's website (We swear we're still in business! [served from a dusty closet somewhere])

I'd go with the business coupe for legroom.

Was the one you saw yellow?

similar to VW conversions from the 1940s.

Drop a pickup box in the back of this business coupe

While the Amarok is made in Argentina, the Saveiro is made in Brazil, but I don't know how long it will remain effectively compact. Both the Fiat Strada/RAM 700 and the Chevrolet Montana are now around the same size of a 20y.o. Chevy S10.

I don't remember if I took those pictures in 2008 or 2009, but later (around 2012 or 2013) this Saveiro appeared once again, and I took other pictures. The star was white IIRC.
