I think we're leaning toward one of the first two in this image:
With the idea that we could use those grocery store type price signs (where you black out the appropriate parts of "888" with a black marker to add your actual mileage. Or if people don't want to show the mileage, they can cut off the bottom.
Still working on the details...

I suggest (urge, cajole, appeal, goad, plead...) that you go with the first one, the one that has the 'wrench smart, drive smarter, save fuel' slogan on it. You could put the mpg digits at the bottom, for those who may want to cut them off, as you mentioned.
Is it too early to ask what these puppies are gonna cost?

One more unsolicited idea, if you use a pre-defined "88", for the actual mpg reading then the user can fill in the unused number segments with a black sharpie, so you don't have to do custom bumper sticker printing. i.e.:
edit: doh! This is exactly what Metrompg said 2 posts earlier. Maybe 188 would be sufficient.

I like it, but suggest moving the 88 MPG to the very bottom so you don't have to eliminate the motto along with the mpg.

I was thinking maybe some sort of plastic clingy thing you could actually write your mpg in with a sharpie, and wipe it off and change it when you need to. That way it also ends up on the inside of the window of the car so it doesnt get messed up.
