DiabloSport inTune- What prameters to watch

I have a DiabloSport inTune. This is more of a tuner than a guage but I can display about 8 parameters on the screen while driving in it's recording mode. So I am wondering what to display to help with mpg. I can't buy anymore "toys" for my car right now.

I could not find a instant MPG value. I did find the vacume on the intake and have been monitoring that. I found torque but the numbers are quite variable and seem hard to use as a way to adjust my driving. I will be putting oil and coolant temp on there to help me monitor temps as I add grill blocks.

So here is what I plan to display.
intake vacume
oil temp
coolant temp

RPM and MPH I can get from my dash. I also have a temp guage in the dash but based on what I read here they are not allways accurate so I want to confirm the reading for a while.

So what can I look at while using the KISS principle so I am not distracted. Thanks.

I suppose if I add brake peddle position I could analyze my trips afterword. I have to log in order to see the gauges anyway. I'm going to look for gear selection. I am trying to do Engine On Neutral Coasting.
