For my older Honda's the two best MPG feedback tools I've found are an SAFC or VAFC, that way you can watch your TPS and vacuum. Plus, if you have access to a local tuner/dyno you can wring a little power and even lean out the top end a bunch. Even simpler is just a cheap vacuum gauge. The closer you get to 0 the more fuel you're using.
Oh, and find yourself some rear drums from a 1G Insight or 1984 CRX HF, they're finned aluminum with steel inserts, good for a few lbs of rolling resistance.
