A big concern I'd have with straw-bale construction in the hot, humid southeast climate is mold. Around here, even when stored in a dark, dry barn, field-dried and baled straw bales start getting moldy within a year, and if kept for several years, get really moldy and mold growth will swell them to the point to where they'll snap their baling twine. People are concerned about indoor mold spore levels these days and moldy straw generates many, many more mold spores than either moldy wood or drywall. There's nothing like the smell of moldy straw and if you run over a pile of moldy straw with a bushhog it can look like a smoke cloud from all the spores being kicked up.
