I would say the aspect ratio impact is not so huge.

In Europe all tires have the energy efficiency label so it's pretty easy to compare different sizes. Based on my research the sweet spot is around 60%

Higher speed rating means more belts are needed which need to bend during driving. Bending is bad for efficiency...

Same goes for load rating, use lowest load rating tires you can.

My optimal tire size for model y and 3 is 205/60r18. That 215/60r18 is very close to that.

In winter tires continental 225/60r18 is a rolling and 215/55r18 is c rolling. Sizes are pretty close to each other. That is only time I have seen that mark travel so much.
