Thanks for taking the time to explain your setup. My gas water heater is likely 17 years old, and I'm considering replacing it with a tankless. I didn't realize there were more affordable models until you provided the Ebay link. Do I have to install on an exterior wall, or can I just use the existing ducts that feeds my current gas heater? I wouldn't want to install on an exterior wall because it already takes ages for hot water to get to any of my low flow faucets.

I too set my temperature at just the setting that is comfortable to take a shower in. It's a great idea and should combat the problem of temperature changes when other faucets are opened.

I must admit I hardly use paper towels but when I do I can use 2 or 3 at a time. However what I cant stand to waste is food - if there is a small amount of food left over from tea I will wrap it up in tin foil or stick it in the fridge and have it for my lunch at work.
