I believe you could make it simpler and use a brake handle from a bicycle and use that same line tensioning system. It would just need to be spring tensioned so that when you are using the pedal the line doesn't get slack in it. But then again using a lever is probably much easier than using your wrist to squeeze a handle
That's how redneck did his hand throttle, I think donkey's design is a little more "bullet proof"
