It is easier to trade for a sailboat than to get a planing hull to sail well. I have seen a few small yachts converted to fishing, and they do have efficient hulls. A catamaran might be the preferred type, or a monohull with a daggerboard so you can lose the keel drag when it isn't needed.

Their FE is often claimed to be better than 4-strokes. Well, at least it used to be when most 4-strokes still relied on carburettors...

Hull design stability vs speed/efficency
Hull design:
The big trade off in kayaks is stability, versus speed/efficiency.
Sea Kayaks with long slender hulls follow same rules as a wind tunnel.. cut your water path and release it slowly.
Kayakers are loose in the hips, letting the kayak wobble as the upper torso stays squared with water horizon.
If you mount a small diesel engine on a Sea Kayak and keep it at peak torque rpm you may experience amazing Mpg. Or you might flip and drowned!

I’d say if your going as efficient as a Kayak just go ahead and go electric. Trolling motors are often free, or do something with higher speed if you are so inclined.

For a Kayak ,an electric motor might be a good idea!
12 V lithium ion battery packs are light weight and Powerfull.

FE for a boat
I had a 18 ft aluminum boat full top with a 60 horse four stroke fuel injected motor
I could put 5 gallons of gas in the boat and troll all day

I just learned why warships have always had a squared off stern. The tapered would be more efficient but the square is faster and efficiency isn't as big of a concern. That square creates a high pressure area where the prop is giving it more bite and less cavitation. Therefore a little more top speed at the expense of less efficient.
