1986 Corolla FX-16. Fun, tossable, economical. I loved those things.
1978 Honda Civic. Cheap, zippy, fits in just about any parking space...if you can find one.
That's all my recommendations.

If you want good MPG and don't want to shift, Prius is the answer!

I vote for the Honda Fit, Chevy Sonic, or Mazda3. Mazda's doing great things with their engines. The Sonic is a lot nicer inside.
Down with Hyundai and Kia

Peugeot, Frank?
The guy's in California, a lot of the marques you call out aren't available Stateside.
Vega? I'd drive one if it could be found not already rotted to lace and ashes, but in Tennessee its half-life would be measured in minutes. Too wet, too much salt on winter roads.
I think you're just messing with the OP.

Surely you jest!
There's only about 200 different hatchbacks to choose from. How the hell is anyone besides OP to know what OP likes?

I bought my G2 Insight one year old with under 2k miles (!) for just 15.5k€.
As they are phasing the Insight out, you should be able to get a great deal.
If you are considering a Prius, don't forget about the Insight.

That's true, and well said. Most people want a hatchback so they can have more cargo space. Some of these hatchbacks are so small that it defeats that purpose. More of a fashion statement than a practical vehicle.
Another downside to hatchbacks is that their inherent aerodynamics are not conducive to good fuel economy. It's a trade-off. You can't have it all.
Also, don't expect the EPA estimates for MPG to be accurate, as actual FE experienced is typically lower than stated. Disclaimer: "Your mileage may vary."
