AZ temperatures get a quite a bit hotter than NC, but NC has a much higher percentage of humidity, but I'm not sure what effect that has on engine temperature if any. Most summers our highest temperatures will run 100-105* F with the normal highs being 90-100* F. As for the higher temperatures I run the engine at, that car has 506K+ miles on the original engine without a rebuild or even having the head off of it. Also the presurized cooling system on a car raises the boiling temperature, a cooling system running 15psi raises the boiling point to 250* @ sea level and most cooling systems run 15-17 psi on their cooling system.
I don't think you'll have any problems with overheating if you have good air flow from underneath your car and your cooling system is clean and filled with 50/50 water/anti freeze, but as I said before I'd keep a close eye on it in city/stop and go traffic until I was sure.
