Why?
Your body needs energy, it does not need sugar. You can easily produce the energy you need from the fat in your diet.

I can't ignore carbs altogether. I did try that once, when I was first diagnosed. Nothing but proteins and veggies. Spent most of each and every day feeling hypoglycemic... sometimes dangerously so.
Fat just takes too long to turn into energy.

My guess is that science will eventually find that each person responds differently to various diets. Some people can't digest dairy very well, or don't handle a jolt of simple sugars (diabetic) very well. We metabolize things differently, and finding a healthy diet doesn't have much to do with following what works well for someone else.
One day we will have our personalized genome mapped, and that will get us closer to an ideal diet tailored just to our needs. Until then, the best we can do is trial and error.

Yeah. That whole "eggs are no longer bad for you, m'kay" thing that came out recently apparently only applies to people for whom eggs are not bad.
So, I still don't get to eat a dozen eggs a day.

The answer may not lie in the human genome per se:
Gut Bacteria In Amazonian Tribe Reveals New Information On Human Microbiome : T-Lounge : Tech Times

Some of the bacteria seen in the Venezuelan villagers had never before been seen in human beings. Human bodies contain trillions of bacteria, many of which are beneficial, assisting in the digestion of food, fending off disease-carrying microbes and strengthening the immune system.

From memory they aren't that hard to culture.
Seems they could easily prevent extinction and test it on broader populations but alas, I might be digressing,
Ah well.

I didn't want to gross everyone out; but since you ask, that isolated tribe could get rich trading their poop for fiat currency.

Trade their poop for Fiats?
I need sugar after a run. I can eat a meal, but I feel like a zombie unless I at least eat an apple. Oh no! I am an addict!

Ok, guys
I tried Eat To Live by Dr. Joel Fuhrman - a LARGE salad every other day and normal meals between. Did not lose a pound but did cure myself of diabetes - my A!C was the absolute lowest on the prediabetic, not diabetic, scale. Then, to rid myself of high triglycerides and insulin resistance, went on the new Adkins diet (Drs. Phinney and Volek, I think.) Lasted two weeks and suddenly found myself arthritic in hands and feet. Stopped and that went away. Another dieter said that that diet gave them Gout.
Damn. Found another diet that says eat 1/2 as much protein as carbs (fiber also slows carb digestion) so added that to what I am already doing. Need a better diet, tho - am still gaining weight slowly. Any iworkable ideas?
