I would get a very detailed bill of sale, screen shot the for sale ad and then start your states process for getting a title.
In new mexico it's easy to get a tile for a no title sale. Maybe even too easy.

Do I just tow it two hours to the nearest dealership and have them cut a new key?

When in that situation I have just disassembled the steering column so that I can start the car without and drive it.

Story:
One time I went with my brother to the JY. He had borrowed his boss' truck to get a hood for his car. Well he lost the keys to the truck somewhere along the way. So we got a ride home and got a copy of the keys for the truck from the dealer based on the VIN. The ignition must have been changed at some point because it didn't work. So we took it apart enough to get access to the starting switch to drive it home. Once home we put it back together and bought a new ignition cylinder. It was an older silverado though which is pretty rudementary in terms of security.

You'll need a dolly if the steering column is locked. Or some lock picking tools.
