Have you all thought of just...wiping the fog off?

Strangely, yes.
It works for the part in front of your mouth, but with modern safety restraints it becomes harder to reach some of the rearmost windows.

I bought some at the start of winter, and the next morning after I applied it, it had all frozen and the windows in my car were very opaque-white. I had to scrub it off before I could drive anywhere.
I would use it during summer, but not in winter. It's not cold-weather friendly.

See my post above. I can be in northern Minnesota on Sunday and central Florida on Friday.

Do you really need to get the rearmost windows? The windshield and side windows are enough for me, as long as I can see the mirrors.

This guy says Rain-X Anti-Fog works, but shaving cream works just as well:
ChrisFix says Rain-X, shaving cream, and toothpaste work well:

This had me Googling "Silica Gel" the most common desiccant and found this:
"The most common desiccant is silica, an otherwise inert, nontoxic, water-insoluble white solid. Tens of thousands of tons are produced annually for this purpose."
No doubt some other desiccants may be terrible, but the most common one, not so much.

No, I'm just naturally argumentative.
Actually, I don't have an outside right-hand mirror and the inside one works better. It's a 5-panel Wink mirror so I can see out both the rear side windows through it.
